I believe in Canada it is called Pork Tenderloin without the bone and with the fat still on. I am not sure what the french terminology is however, but I am pretty sure they will know what you are talking about if you say tenderloin. Good luck; and don't forget to ask them to score it every centimeter on the fatty side! =D

I live in Canada, and went to a butcher but had NO clue what to call this kind of cut I said deboned loin with belly on and they seemd to have no cule what I was talking about. any suggestions on what to call it? In French would be the best oh and English as well =)

Any good supermarket will have it, or butcher. Some non-cooking strings have fibers which can ruin your bite and in some cases that is acctually dangerous to eat.
