Lovely recipe. I really enjoy this type of food. Helman's Bestfood is an ingredient, used at many top restaurants in the States and Britain. Many people would not make their own mayo, so I'm okay with it. The dip is appropriate for this recipe, IMO. Keep cooking. Blessings ChefMike

I made these for Christmas Eve. I followed instructions but covered in flour, egg and breadcrumbs 2-3 times instead of once. I also made them a bit larger. They came out exactly like some arancini I had in Sicily once. Perfect! Thanks Gennaro!

By the way, they are called ARANCINE, not arancini. They're female, they are in the shape of an orange, arancia, and they're small, so arancina. Hence the plural arancine.
