The white pith of a lemon is very bitter and should not be used. No wonder you have to add more cordial to make it sweeter. Also, we in the world away from England cannot get elderflower cordial. What should we use instead, if at all? Try being a little more realistic when giving out your recipes so that the ingredients can be used by all. Thanks.

Hi Anna, I recently bought your book and have absolutely been loving the recipes! To those out there who have been considering buying it, I highly recommend- it's the first cookbook I've seen in a while that actually feels unique to most of the books out these days- with recipes and flavour combinations I'd never really seen before. unwaxed lemons The unwaxed variety is best for slicing and adding to drinks, or if you wish to zest the rind for use in cooking. Waxed lemons keep longer and are best used if you just need the juice. If you do want to use the peel, scrub the skin well first.

But isn't the pith of the lemon extremely bitter? I'm confused as to why blitzing the whole lemon would add anything but bitterness and an odd texture. Wouldn't cutting out the flesh and zesting the skin give the same brightness?

I feel like if I laid my head on Anna's lap underneath a tree in a breezy meadow somewhere, all my problems would just melt away. Much like this delicious sorbet would in the warm rays of the early morning sun.

i would take the one that is forked and put it in a blender, then put it in the dish again and freeze it for 10 to 30 mins depending on how soft you like your sorbet and it should be the same as the other one!

Why do I keep on hearing people on jamie oliver talk about unwaxed lemons? I've never even heard of a waxed lemon or any kind of waxed citrus. Is it a normal thing to have lemons dipped in wax in the UK?

It might be more work but rather than the whole lemon wouldn't it be better to remove the white pith and use everything else because that stuff will give a bitter flavor wont it?

Really cool idea, using the whole lemon. I have to try that. Also, if you don't freeze it, but serve it as a drink instead, it's a strawberry & elderflower lemonade!
