Today Im going to show you my version of guksu, a simple and delicious noodle soup, and one of my all-time favorites and go-to regular meals. My version is spicy and savory. I always have kimchi and anchovies on hand, so its something that I can always make quickly for lunch, or when people suddenly come over.

The guksu looks delicious, but definitely not the kuksu I am used to. When I think of kuksu, it is different kinds of broth and noodles, depending on whether the kuksu is cold or hot, with the noodles at the bottom and their top in the center being surrounded by toppings. Thin strips of meat (beef, chicken or veal, fried kimchi, bok choy or Chinese cabbage or plain cabbage, marinated cucumbers, green onions, capsicum, mushrooms etc for hot broths. Topping of meat, fresh cucumbers, tomatoes, radishes, dill, green onions, egg, coriander etc for cold broths.

Well Maangchi. if we are all korean housewife master chef like you, then we might as well make our own meals more often, but we are not as good and I believe all of us will probably go buy the ingredients for those dishes that we want to make and learn from you, but never use it ever again and let them sit in the fridge haha, and I will always need to see your recipe, so while watching your videos and making the food, for you it might take 10 mins and for us it will take forever to make aha

In 1981 I visited Pusan Korea (twice actually) and being the foodie I've always been I went exploring various restaurants there. Ate stuff I had no idea what they were or even how to make them. some things (Bulgogi for instance) I could make educated guesses and approximate at home. Watching your videos has been like going down memory lane for me. I now know what some of the things I could not identify then are now and better yet I now understand how to make them. Thank you for that.

I don't know about other people but your videos are Therapeutic for me, I always watch 1 or 2 of your videos and I am relaxed and not overthinking about my business so my brain is ready to sleep. Your energy is just happy and relaxing, feels like a friend is talking to me directly and teaching me how to cook Korean food (my ultimate favourite food) Thank you so much Maangchi
