Hey. I remember challenging you some time ago to create a sushi dish with a list of ingredients. I believe I listed very lightly seared Tuna from a low fat cut, Mango, Avocado, and an unconventional ingredient, Black Olives. You said you'd try it out so I'm just checking to see if you still remembered. Do you still plan on trying it out some time? I'm very curious. I feel like searing the tuna for a short moment would better accompany the Olive flavor and provide an interesting contrast with the sweet of the mango and the light buttery fresh flavor of the avocado.

You are an absolute genius! What you do is amazing. In Culinary School our chef instructors were VERY anti-cute garnish. Garnishing was kept to a minimum or points were deducted from your grade. Focus was on the dish rather than taking it away on the garnish. It's obvious we had different instructors. Can you comment on your training? Were you trained in Japan? I am absolutely blown away by your artistic brilliance. Keep up the good work!

Very nice chef, but like sushi most times less is more. the editing on previous videos where the best on my humble opinion. dont over do it. this is youtube. if i want nice edited shows will go watch nigela in bbc or something else. ur vision and taste is what we like on a weekly basis, so more work on editing and filming and less shows will be a bad choice. but u still have a fan.

More dynamic, I really really enjoyed watching it: D I was watching Ben from SortedFood packing and patting down some rice in his sushis and I was wincing a bit, thinking you wouldn't approve heehee: ) I kept hearing you in my head: fluff it, fluff it: ) hahaha (that being said, I love SortedFood dearly)
