Without a really top quality and sharpened knife you will ruin the whole roll during the last part. Believe me, it happened to me, as you must efficiently cut the kitchen film, the avocado, the rice (which is sticky and awkward to cut by itself, and cooked chicken, all of it full of sticky sauce, to make everything more disastrous if you fail. I thought I was doing something wrong with the uramaki recipes but at the end the problem usually is the goddamn knife.

Your teriyaki chicken was brilliant and delicious. My only criticism is: you should remove the tendon before frying in the pan. It is chewy and inedible. Hold the tenderloin's tendon on a cutting board with your fingernail, then hold your knife at a forty five degree angle and slide it along the tenderloin and discard the tendon.

Hi! I'm wondering if anyone knows what kind of sake and mirin I should use for the teriyaki sauce recipe for this roll. I've been looking around at asian markets and there are so many mirins/cooking wines, and I'm not sure where the sake is? Any help would be great!

Thanks for the Tutorial! The sushi looks really good! But the end bits of the sushi that you say should be thrown away, I disagree with because they are still part of the sushi roll and should be served. If you don't agree that is fine by me.

Great demonstration, but the cutting board was not flipped over before assembling the sushi or slicing the avocado. This is evident from the wet chicken stains. Cross contamination is dangerous, please keep that in mind!

I don't like sushi but I never been to a real sushi place soo I wanna try it with chicken instead of fish cause I don't like the fish one but I love chicken.

The ends can be eaten by the chef or thrown away? I am not Japanese, but i can tell you in a real sushi resteraunt they dont waste anything. Looks good though.
