I just wanted to say that I really like your videos. While i don't have the opportunity to really try to make these at home, i would like to one day. You seem very concise with the instructions and it's always interesting to see the different styles of sushi and presentation, you're quite delicate with it. Plus i love sushi: D

Never thought about putting spinach to a sushi roll, but especially with the salmon it combines very well. But what about the decoration? You simply turned a sushi roll in an ecceptionel piece of art. Lot of effort, but stunning look! . And I thought I take decoration of sushi serious. ;o

So how do you know that fish has been properly frozen to kill any potential bacteria? Also, that was farmed raised atlantic salmon wasn't it? Even if the species is wrong, it was farm raised. You can tell by the thick white fat lines in the meat.
