I am a 68 year old South African woman living in Australia. We are empty nesters and pensioners. Because of my heritage and traditions I find it very hard to cook small meals. But I have learned. My meals are usually for 2-3 meals and a portion to be labelled and frozen. I also cook 4 cups of rice at a time and freeze it in portions. I cost out every meal. My average is $2. 50-$3 a portion. I love quick dinners and I don’t mind 2 hours plus in the kitchen. And especially these days with the price of groceries skyrocketing, it’s very challenging to find cheaper options.

I'm going to make your second chicken meal. I happen to have Panko left from another recipe that I can use. I just finished up my buttermilk for biscuits so I'll coat my chicken with mayo like you did. I have spices so I'll probably add some garlic powder, onion powder, maybe a little paprika to the Panko. And I'll cook my chicken in the air fryer as well. Easy peasy! And I'm single so I appreciate these types of meals. I'll probably make enough for about 3 meals though so I don't have to cook every day. Thank you Angelica!

When I plan my menus for my husband & I, I ALWAYS shoot for $5 each plate for protein, then another 2-3 dollars for veggies, so, $7 per plate.
If I'm buying restaurant food, we calculate the cost of 2 meals with INTENDED leftovers for tomorrow's lunch! EXAMPLE: A box of frozen coconut shrimp is $9 dollars, and we split the shrimp between us. I'll then add a vegetable and THAT's it: about $5. 50 a plate. I do this EVERY TIME I plan meals.

I love this! It's just my two littles and myself, and they normally don't like eating the same thing twice. I always end up making too much of whatever I'm cooking so this is perfect! Also, I love the variety of ideas you give us, because even though everyone loves my cooking I always feel stuck when it comes to getting creative doing so. So thank you and love the hair! You look beautiful. That hair style gives you a soft look and is so stylish. More recipes for two would be greatly appreciated. Also thank you for caring that we all. Do not have every ingredient. Grocery has gotten really expensive. Our house is cutting back hard to keep things more reasonable. Almost feels like we are fasting at times.

I smiled when I saw the ingredients. These meals are what’s saving my budget lately. I alternate between the knorr rice and the pasta/rice a roni boxes. Whichever is on sale that week. If they drop to 1. 25 I try to stock up. They’re delicious and go along way. Especially if you toss in broccoli florets.

I just lost my husband of 38 years on 1-17-25. It is just me now! I cannot put a complete sentence together, much less try to cook for one. Have three freezers full of cooked food, sauces, soups that are for 2-4. Melas for 2 is much better than family!

Do more of these I'm alone, but I know it's not easy to make a Meal for one person, for one Dinner I'm single, and what I tend to do is like 2-3 Casseroles for the week, like green Chile enchiladas, etc.

Definitely one pot/ skillet meals. Single guy and like to take leftovers for my lunch after dinner the previous night. Also another idea maybe put together what a good list of pantry staples would be.

Love to cook, hate clean up sometimes. Just two now but do send leftovers with husband to work. Thank the Lord he has no problem with them plus just basic food. Cause casseroles go long way.

Love these type of easy one pot meal. Remind how I used to cook quickly when my kids were in school and were all 3 involved either after school activity and we were always in a hurry

Angelica, well done from your neighbor to the north (The Woodlands. These are great basic recipes that people can add to, adjust, get creative, etc. Sometimes basic is smart.

I like that you showed not deep frying the chickens tenders. It's helps people like me who have high cholesterol that you don't have to fry things to get a tasty simple meal.
