Today I am cooking at home and making golden cornbread cakes. This is a cross between a soft pancake and buttery sweet cornbread. You may know these as johnnycakes or even hoecakes. This is a great way to get your sweet cornbread fix without baking. We like our cornmeal cakes too. I just use the box premixed cornbread in the waffle iron though. Can't get any lazier than that. Love this recipe
