5: 00 Mark, that is NOT a biryani, that is a mutton pulao because the raw rice and meat are cooked in the same water and the water is absorbed. In a biryani, the rice is separately half cooked and the water is drained. Then the rice and meat are layered and steamed in an air tight container.
Most obviously way to tell the difference is biryani is two colored (white/orange) while pulaos are uniform single color.

Mark, excellent content. One suggestion: You should give the Chefs a couple of minutes of screen time. Ask them a couple of questions, and allow them some fame. The Chefs who created the largest biryani looked like he was hoping for some acknowledgement, and a moment to appear. Is not the Artist of greater importance, than those who appreciate the art
As for this content. WOW! What a huge pot of love created with love. I think I was salivating just watching the biryani being made. Beautiful!

Mark Wein should be a judge on Master Chef! We would never get a Winner, only a Weiner! Jim Carrey of food ala Ace Ventura in every single bite. Guy, tone it down, get some spectrum of taste, rate the food, every food from over spiced, overkilled is ohhhh laaalaaa for you! The truck stop biryani in an industrial shed is the labourer standard biryani, not cuisine as the mughal shadi one. Tell us the range, prices, portion, vs affordability, tastes, etc. Your taste bud must be fried!

Incredible to watch, I've made some biryanis and my tip would be, start with a good recipe and over time keep records of quantity of rice, water and salt used, these three things are the most fundamental and when you find the best balance it's a great result. Always remember ingredients like tomatoes or some fruits will add moisture. Wish you the best on your biryani journey.

I'm not sure why they named this dish Biryani, because it doesn't resemble biryani at all. In fact, this dish is actually more like a Dum or Yakhni Pulao based on the cooking method and the color of the rice. But in the end, it's a free world and everyone has the right to call it whatever they like.

Biriyani in Lahore, Pakistan is the best by far.
Kolkata style - which developed from Lucknow style - does a better version than Hyderabad.
Dhaka, Bangladesh style is good too.

This is my favourite Biriyani spot in Bangalore. You can taste every mutton flavour in the rice which you will not get it in the Hyderabad dum Biriyani.
