Every time I’ve ever seen a Kiwi in an interview or anything they are always the most polite, accommodating, and in general laid back group you could hope to meet. Would love to experience NZ but from what I understand too many billionaires turned New Zealand’s economy and real estate market on its head. I understand under said circumstances wanting to ban foreign ownership and immigration and such. It’d just be cool if there were ways to distinguish from people who buy up hundreds of hectares of wilderness to build massive luxury bunkers they’ll probably die before using, and normal wage earners who would immigrate and contribute to society. Cuisine, architecture, etc

Kia ora Mark - welcome to Aotearoa! Here's my secret Whitebait Recipe I'll share with you. Separate 4 egg yolks, try to keep them whole. Whisk the egg white until fluffy. Add whitebait and salt to egg white. In a hot frying pan add a couple of scoops of butter. When hot add four even whitebait fritters to the pan. Add yolks in the middle of the fritter, similar to cloud eggs. They dont take long 30 secs each side ensuring fritter is crisp and fluffy and yolk is runny. Add fritters to two slices of fresh white bread n butter, add a bit of salt, pepper and tomato sauce. I'm telling you they are devine. It's soft, crispy, yolky and acccentuates the whitebait.

I love vacationing in Australia and New Zealand i have a pretty black sense of humor and oh boy! the Ozzies and NZ Landers are great at that! and getting the faul joke immediately! if I were staying with the old lady 3 days in I would probably call her ''old bat'' or ''witch! '' and she would totally get the humor and wear the insult as an honorably medal!
If you insult an Australian, Tasmanian, or New Zealander and do it with satirical flair they will get the joke it's what they do amongst themselves some Ozzies insult like other people would say hello! they are my kind of people!

I am so glad that your agenda was to taste the native foods throughout Aotearoa. You show cased NZ as it should be and makes me so proud of how respectful you and your family have shown us. Our tangata have made us proud and your guide Christian was an amazing host.

You had some incredible hosts this video. How wonderful for her to cook for you even though her restaurant has been closed. And as a cheese lover, I want to go to that place with the cheese rolls so bad. But my favorite part was the muttonbird boil up. That looked amazing, and I loved the chef's personality. He's such a laid-back genuine nice guy.

That Mutton Bird boil up looked so good!
I've only ever done traditional (Pork bones, Pork belly, Potatoes, Kumara, Watercress, Cabbage, SaltPepper and Doughboys); but this looks like its worth a try.
Love boil up because its so healthy and its actually quite economical; costs me about $50 to do a boil up and thats for a good 20 servings.

Those yams (10: 16) are originally called oca (Oxalis tuberosa) and it's indigenous to South America, but also grown in NZ since the climate is similar. I'd love to visit the Andes to try all of their wonderful root crops. (Potatoes are also an Andean root crop but more well-known. Un-gentrified indigenous potatoes are super cool)

In ww2 north africa some n. z supplys going to the boys on the front lines fell in to germen hands. barrels of Titi [ mutton brid ] were found, the germens reckon the kiwis were running out of food and had started to eat sea gulls Lol. little did they know.
I always wondered if they tried them.

It's not indigenous food. You are migrants to New Zealand. Just like other people. The only difference is that you arrived much earlier. You are not like Aboriginal people are in Australia dated back 45000 thousand years. You are immigrants, swallow that! NZ is not your native country!

that looks like a delicious spread. Love the Paua, Mussel, Eel, Whitebait Fritter, Chowder. And then with the vege yum. good to see different styles of meals from different locations around NZ.

Wow what a beautiful part of New Zealand so pretty and picturesque. I’ve never seen abalone so big in my life, those are huge. New Zealand is definitely on the list to go visit, it’s close to me but I just haven’t had the time and chance. Thanks for this video as always mark.

I've just started seeing Mark's videos. Does he ever have not so good reviews Like from nz, some of the food personally doesn't hit that hard such as the Hangi, perhaps I haven't had a good one But it's harder to believe his reactions if everything gives that same satisfied face.

Moeraki is one of my favourite places in NZ have so many memories around there since I was a kid. Love going on the Moeraki fishing charters then the local pub afterwards.
I do miss the awesome restaurant you went to. I’ve always wondered why they closed down.

my missus always makes patties / fritters with a small amount of bacon. the fat brings out the flavour. word. the whitebait is the same just a small amount of cream. minimal everything else. tell me im wrong utube. us horries know how to cook this treasure. love

Mark must have looking at them cooking and been wishing they’d add some chilli’s to it cause I was, just a bit of coriander some chilli’s shallots. Mixing New Zealand’s seafood with Thailands spices would be EPIC it would be the best food.

What a feed. I live a few hundred miles north of Fleurs Place - For those not from NZ, Whitebait is a real delicacy and very expensive. That clear plastic bag that Fleur had full of whitbait was at least $300 worth, maybe even $400
