You also have garlic in some tomatoe sauce to substitute the heat from black pepper but I completely disagree with the black pepper the lady was saying it should be at minimum a pinch just to balance the natural sweetness of the tomatoes as well to give you the after kick of a lil heat after you feel the sweetness of the tomatoe sauce when it first touches your palate but I do agree not everything needs too much black pepper

people like elena reinforce why i love cooking. Its, for me at least, more about the history or the story of the food and the socialising that comes from it. Food is what connect us to previous memories and generations and it brings us together. Obviously we should always push the boundaries of what food can do and constantly reimagine it, but we can never forget why food is so important to us

Loved her! I would only hope someone would actually get your recipes into a book. Could be so much more than a cook book, but a book that happens to have recipes sharing her personal story and that of her community. Awesome episode. Danny, your always so open with your energy that it truly makes your subject shine to a level that makes us love them from the get go. Thanks!

I had a friend that has family that was full Italian and he had a grandma just like this. loud and everything and I loved her to death. She cooked for the Fourth of July and it was the best food ever. and there was no -meals- we just ate different foods all day long. I know no one cares but man this video brought back memories to her

Not sure what shocks me more. no pepper, or not even roasting for sauce, but tearing out and discarding fat. from one of the leanest proteins known. What Italian throws away flavor potential like that away? Pancetta and butter went in, so it's not like it's weight watching either. -Tsk tsk.

maybe you pull your head over your ears idiot. -plus everyone who says about italian recepies: -this is how its done, everybody that does this or that is doing it wrong- has no idea of italian cusine. -she hates pepper so what. she is simply anoing.

That's true! All culinary hipsters out there thinks just because they went to culinary school and got a diploma, thinks they are now in par with Paul Bocouse! And Paul Bocouse didn't even attended culinary school, he work as a cook!

That lady know what's she's doing. People love her dish. Use the pepper to make it your own if you so decide. Next time I would like to see the animal being killed first. It's just something about the process.

does the rabbit have to be a certain way? we have meat rabbits they are lean less fat taste good though because we give em mostly pasture. is this rabbit for like FEED raised rabbits with a bit more fat?
