I love Jose Andres and had a great meal at one of his restaurants in DC, but this is not such a good recipe for a tortilla. Go ahead and fry up some sliced potatoes in olive oil. Then add then to the beaten eggs to rest for 10 minutes. It is much easier to flip the tortilla against a larger oval plate and then put it back to fry golden on the other side. Watch 3 or 4 more recipes on YouTube. It's very basic. This is one recipe where you don't want to be creative.

Spaniard here, I've been eating Spanish Tortilla my entire life and this is NOT a Spanish Tortilla. DO NOT use chips EVER to make a spanish tortilla, you are killing mediterranean gastronomy doing that. -Look any good videos to make spanish tortilla. Cut your own potatoes and fry them. This man helped Haiti after the earthquakes by donating hundreds of solar kitchens! He says we can save the world with these things, solar ovens and stoves! Great man, been around for a while but just now starting to get noticed by other's outside the food industry. Go get em Jose! : )

Just a little fun fact. This guy-s restaurant was the one offering free meals to employees in DC last govt shutdown. His non-profit. org also helped deliver food to ppl in need in PR after Maria.

As far as I've always known, frittata were always italian, but there are so many things that have been intertwined with Italy and Spain that sometimes it's hard to know what came from where.
