Yes, we know lye is not -acidic- and that the pH of the solution should be about 10 or 12, but the technique for making homemade pretzels is pretty good. This may be her first major video so cut her some slack--she was obviously nervous. You can get a pretty good approximation of sodium hydroxide by putting baking soda on a parchment lined baking sheet at 450F in an oven for about 3 hours and up to 6 hours for a stronger base. Leave the oven cracked open to help extract the dihydrogen oxide.

Just an FYI, the Lye is actually the opposite of acidic, it is very Basic like bleach only more so! It can give you a chemical burn, as well as the exothermic reaction when mixed with water makes the solution very hot! NEVER pour water into the Lye! It can react violently enough to spray out of the container and onto you and your eyes! Be careful mix it as she is and you will be OK! To get it cooler faster use ICE water to mix the Lye with.

Remember that scene in Fight club where Tyler kisses the hand and pours the powder on it and it burns? Yeah thats lye. I cringed a little when she leaned down to get a closer look at the solution while stirring. A stray bubblesplash hits the eyeball and you could lose it. Be very carefull working with lye water. I recommend protective eyewear when handling lye.

Enjoyed the recipe but just wondering if less single use plastic could of been used during this video? I understand as a baker sometimes plastic wrap is the only solution but it could of been reused without using new piece each time. Just think it's good for viewers to be aware of. Thank you -

Lye is not acidic. Lye will not burn you either, the fats in your skin undergo saponification. Baking sodium bicarbonate gives off a CO2 to produce sodium carbonate, also known as kansui, used in making ramen. Source: Masters in Chemical Engineering

It looks good but I don't think it compares to the pretzel I had growing up that I got off an ice-cream truck ran by an Asian man an his wife. Served with salt and French's yellow mustard. And was -1.
