You sure he got the history of the food right? Using left over lechon to make a different dish. That sounds like Lechon Paksiw, which usually starts with lechon kawali, cooked in a vinegar/liver sauce.
And sisig. If I remember correctly it was a way to use up the pig heads left over from butchering hogs for the Americans in a military base (Subic, maybe. It's the pig's face (mostly cheek/jowl and ears) boiled, grilled, and fried. Mixed with some pig organs, I think.
Lechon belly sisig was a way for people who don't like the idea of eating a pig's face (like me) but want to know what sisig was all about. Having tried both belly and conventional sisig, I can say they don't taste the same. Sisig from a pig's face can taste good if done properly but mostly it's crunchy, sinewy, and organ-y.

I was following a recipe which said essentially: boil the pork, leave over night to dry, then deep fry.
I didn't listen, I only left it for like half an hour and patted it dry, , heated up the oil on a gas stove and almost set my house on fire.
The lesson I learnt: Dont cut corners.

In Brazil we call this kind of pork torresmo, which is exactly like this! In the Minas Gerais state we eat this fried pork with beans, flour, onions, garlic, bacon, sausage, pepper and egg.
We call it tropeiro (which was a brazilian type of troop horseman) and its a delicious plate!

The guy's parents are first generation Filipinos who he can learn Tagalog from yet he doesn't know how, or refuses to pronounce the dishes or his name properly. As a Filipino, why do people raised in other countries have to butcher their language? Learn it, man. Respect your heritage.

Filipino food is at the bottom end of Asian cuisines. tbh
It s on the level of other poor nations with less resources like Laos, Cambodia, etc.
Filipino women have got to be some of the most beautiful Asian women though.
But their food sucks.

Lol. Lechon kawali is soo different from lechon. Its called lechon kawali because you lechon (roast) the pork in the kawali (wok, unlike when you do the proper lechon where you roast it over hot coal or an oven.

I used to eat the senior Burrito with cilantro cream sauce all the time for lunch. Might be better than Mexican burritos. Blasphemy, I know, but it had to be said.
