I felt that when you shared your cherished childhood memories and reason for cooking because of your mom. My mom passed a month ago too and her food and cooking was one way she showed her love. She always wanted to set up shop selling egg rolls. I m glad to have watched this especially so close to Mother s Day. Your mom would be so proud of you.
Side note: for those that don t eat tuna, protein substitutes can be stir fried ground pork cooked on the side and added to the curry base or shredded chicken (you can buy rotisserie for quick easy option)

I just had similar yellowish coconut champon ramen Hana ichimonme reminds me Curry Udon Ueno station/Tokyo. Khao Soi Sweet Rice in Gardena is pretty good to Chiang Mai. Gotta try dark beer Lao at neighbour Lao restaurant in Little Saigon later today. I heard beer Lao is better than beers Leo/Singha/Chang in Thailand

My father cooks this with chicken. He'd make a huge pot with a whole chicken in it. He'd boil and boil the chicken long enough that itd basically be the consistency of tuna like. Truly the best chicken noodle ever.

Every time my mom makes cow buun spicy she sometimes make it so damn spicy I could barely eat it but I still eat it lol you know how us laos people like spicy food.
