This is Steak Diane - the best old school steak recipe - and we make a MASSIVE version! PRE Mike: Sam, first let me get this out of the way. I am here to help you, not criticize you. Your recipes, I love. Your delivery. I love. Your family around you while you work. I love. Well, I think I love but I don't really know much. You'll have to tell me if I'm off. Anyway, the point. It's your pan, Sam. I too have the giant All-Clad pan you used in this video and just like yours, I too suffered from the crippling effect of what I call, The bow. That is a welt that is left on the bottom of the pan that allows you to spin it. I am sure you know what causes this. I am here to help you with how to fix that. It is a very, very detailed step process that requires close attention but I can guarantee results. Step one. Take the offensive pan into your dominant hand (mine is my right. Grasp the long handle firmly. Step Two: Now here goes the detail. Stand next to a staircase with a corner post. Step Three: Taking a broad stance, centering the impact in the center of the backside of the pan, strike down with great vengeance and furious anger. Just once! Don't be brutal! The offensive pan should be struck in the center of the back. This will put a slight dent in the pan and will make it sit far better upon any cooking surface rather than rocking back and forth. Sure, it may leave a minor bump in the center of the cooking area of the pan but that will be of no significance. The business end of the pan is now back in shape. Good luck with your pan reckoning. Not only did I just watch this guy pretend to be a chef for a couple minutes, but I also witnessed him destroy a beautiful half tenderloin. That nonsense about the large spoon in the pocket of your chef coat is ridiculous, you have tasting spoons at every station that you constantly go through and give to your dishwashers. Please dont pretend to be a chef when youre just the money in the FOH while you hire BOH dudes in your restaurant that actually are what you pretend to be. At least tell people that you arent positive all of these recipes are amazing, best ever, most delicious recipes anyones ever tasted. You also ripped this vid off from the BBCs series with the ex executive chef of buckingham palace you knobs.

OK. Sammi. Not sure what you are up too. I used what i had in the kitchen. for your recipe from the video. ou see this TRi-Tip Steak, Sauteed with avacado oil, s/p, after smashing the meat thinner. Put that under foil let rest. Sauteed the onions & mushrooms, in pan drippings, added butter, and then the brandy, set it on fire. Scared the Sh% out of my wife. That was fun. Added 2% milk, worchestshire. Beef Broth, cut in half with corn starch to thicken up. Forgot the dam mustard. Rrrrrr Sliced up the tri-tip added it back to the pan and WOW. Was that ever Great. I'm old enough to remember those times when you could smoke indoors practically everywhere, now you have maybe a few bars that still allow it. But yeah you could smoke on airplanes, movie theaters, even doctors offices, which was kinda ridiculous at any time in history. But it's more about the offensive odor really, because unless you breath it in all the time second hand smoke will not harm you in small doses, that is a myth. Most cases of non-smoker lung cancer are caused by normal air pollution, not cigarette smoke. Just saying!

What are you doing with this wonderful piece of fillet? And why don't you use a sharp knife? Slicing the fillet is not that bad but knock the meat flat, you know that you are processing fillet and not a pork steak. You don't deal with this meat like that, show that you have no respect for the animal.

Pretty sure the brandy he is talking about is Christian Brothers, I use it all the time for cooking it's about 8. 25 where I live, and I would not recommend drinking it lol. Just like chardonnay(for me anyway) wouldn't drink it, but great to cook with, cheap works well.

Sam the cooking guy; Could you please make rolled/grilled/ pepper and onion steak? My Dad made it many many years ago - yet I cannot find a recipe for it! I was only 8yrs old! It was unbelievable! No sauce, just natural flavor. PLEASE? from Ontario Canada xoxo

SAM THE COOKING GUY- YES, that could be considered a classic recipe for Steak Diane. except the mushrooms were just the more common white or button variety back in the day. Excellent job recreating an old classic dish!
