The only thing I would add is apply a binder before you apply your dry rub.
The stall is the point where the fat phase changes from solid to liquid which counter acts the radiant heat until it fully renders out and finishes cooking.

My hubby has been doing it rgb is way for years and it comes out perfect everytime! Magnificent! Just as moist and juicy the next day! Hugs and blessings! Hope your Thanksgiving was awesome!

Please please PLEASE recreate the Pioneer Chicken's fried fish recipe. I've never had fish like it and that chain is disappearing fast. I can't find a recipe anywhere.

I mean you can use the fat trimmings to make a beef oil or a stock so realistically there isn t any waste by removing 3 pounds of fat.
