When it's chilly outside, one of the things that always works best to warm you inside is soup. And our smoked broccoli, cheddar soup will warm the cockles of your heart. Whatever those are cockal of your heart. Is that even a hey Siri What are cockal of your heart? The cockal of the heart are its ventricles. Well, that's stupid and gross. You hear that? I don't know. Warm the cockal of your heart. It's an expression, hey, siri is warm the cockles of your heart and expression. Yes, max it is. And quit doubting your father. So now, we all know. This will not just warm the cockles of your heart, but you're going to like it. And we're going to make, which, we're going to start off with, a, like five ingredient beer, bread, because when you have soup, you just don't want to do this. You want to do this, and then this. And it all starts here. We begin in our big bowl with three cups of self-rising flour. That's important. Very important. Follow it up with a couple tablespoons of sugar, 1 TBLSpoon of baking powder, put about a half a tablespoon of garlic Powder in this, some diced green onions, and then we want to give it some cheese. And keeping with our smoked theme. Making Dough I've got a block of white-smoked cheddar-smoked cheddar with black pepper, and it smells insane. That's going to work. Now. You would imagine we need some liquid and here's what it is. It's a can of beer. Remember this is a beer bread, so this will go in. Oh, what the hell it's going to foam. Then. That'll subside as we start to mix. And that we will do, you just want everything to come together in one beautiful combo. I know it doesn't look that beautiful, but it's going to taste Beautiful. Okay, that's done. This is a 9x5 baking pan bread pan, whatever you. What's it called? What is this? It's a, it's a, it's a, it's a 9x5 pan. That's what it is. Two things before the dough goes in. One will be a quick spray, and then. I like a piece of parchment because it'll help get the bread out when it's cooked. And in goes, our dough backwards for Max's benefit. And I know he always says it's free for your benefit. But I know what's going on here. So, spread this guy down as flat as best you can look at the very least. This is going to end up being a rugged looking loaf, but still an easy, damn good one. And when it's relatively flat anded out on top, ready for the oven. And by the way, don't forget about the knives. We're giving one away every video this year, just to have, pay attention for your name. This is going into a 350 degree oven for 40 to 45 minutes. There's one quick step after that, but in the meantime, we start our smoking broccoli, because we have to time to prep our broccoli. Knife Winner & Baking Instructions So, a big head of broccoli, it's called a crown. And now, all we want are the florettes. So, you're going to do this, cut these guys off, and then you can make them that size if you want. We're going to end up puring this after. So, they don't have to be perfectly. Even save the stocks for something else. We only want the fettes for this. So continue till this is all done. Cutting & Smoking Broccoli And when everybody's cut, they get a little squish of oil, some salt and pepper. We mix it. Then onto a baking rack. I like the rack because it'll let the smoke get all the way around and underneath and beside and inside out. And the whole thing. Beautiful. This, we'll take over to the smoker. And in we go, set her down and done smoker at 325. We want to leave the broccoli in there until it's soft enough that we can do this with a knife. Well, you can always do this with a knife, but you want it to be able to go in that. That's the key. And then we'll take it off in the meantime. Ah, we can start. Start cooking some onion and garlic

Hey Sam love your videos. You've inspired me to cook more and more. Started with your braised beef short ribs and also did your prime rib. Looking forward to trying your broccoli soup and meatloaf soon. Can you do a butter chicken with naan/rice one day Keep up the great content
Ps. Send me a knife please!

Just a thought from the cheap seats. On a rack above the broccoli add a few slices of thick cut bacon to cook, double smoke and drip onto the broccoli below it and then chopped up and added to the soup for another layer of Smokey goodness!

Sam, please make Vegemite scrolls to dip into a cauliflower soup! Polarising in your neck of the woods perhaps, the strong saltiness works really well with the mild creaminess of cauli Please and thank you!

Not to be facetious, but my favorite beer is Bud Light Lime. Do you think that’d work in this particular application

That looks delicious! But when my Mom made it, she cooked in the broccoli stalks too. It makes more soup and it's blended in anyway. I want a bite of that bread!

I made bread bowls last weekend and used Panera Broccoli and Cheddar soup to fill them - now I have an STCG soup to make instead for next time! Thanks Sam!

Honestly, I love the sound of happy kids in the background. They're outside having fun rather than cooped up inside on some screen, rotting their brains.

I’m not a fan of the taste of beer, but I’d love to make that bread. Would using Sprite or an unflavored seltzer water work as a substitute
