A staple for almost any group event I do. Start with a simple deli roasted chicken and end with the most luxurious and delicious white enchiladas. ever. INGREDIENTS: 3 cups shredded cooked chicken - one of those deli roasted chickens is perfect for this 1 cup Salsa Verde (green salsa) 1-4 ounce can chopped green chilies 1-2 tablespoons chopped chipotles in sauce (more if you like it hotter) 8 - 8 inch flour tortillas 1 cup chicken broth 2 cups whipping cream 1. 5 cups Monterey Jack cheese, shredded

I don't give a flyin' flip that people are saying these aren't real enchiladas. Get over it! I made them last night and they are the BEST tasting enchiladas I have ever eaten! That, people, is the bottom line. If you must get stuck on proper recipes, you are missing out on some great tasting food! Thanks, Sam. And, BTW, I lived in Texas for decades and true Mexican enchiladas use flour or corn tortillas. They use all kinds of ingredients. True enchiladas are what the family decides they should be.

I'm always willing to try a new version of a classic. I would up the chipotles in adobo to double. Love that smoky heat! The salsa verde looks heavy handed with the addition of the green chiles, but what the hell. I would probably have to add some seasoning to the whipping cream. maybe sub in Mexican Crema with some chili powder instead. Looks delicious! Thanks Sam.

Making a version of this lovely gooooooooey dish tonight! What's in the fridge? Asparagus, chicken thighs. and a lil frozen spinach. I'm sorely missing cilantro. Have some nice Hatch chili's and lots of cheese and that insane heavy cream. Flavors will be running rampant, fo sho. :)

I made this just now. I added cheese inside the enchilada though like Sam does in his other enchilada videos. So good. And filling. omg. Food coma as I type. My sister said lemme guess Youtube taught you. I said stfu your mother-in-law taught you. Sam is my mother-in-law. ;)

Reading some previous comments--it's Sam's take on the traditional Mexican enchilada, a more Americanized version. Here's to a bit of innovation and modification! It looks good and easy enough that I will try making it for my family.

Gringo enchiladas would be a more appropriate title. Some people in this comment section need to get off their high horse. If you really expected authentic enchiladas then you're a fool.

My moms recipe uses whipping cream in the sauce, but also calls for tomatoes and enchilada sauce. I always thought whipping cream was a strange ingredient but I guess its a thing!
