Pork steaks are a summer staple in the St. Louis area. Almost every week, there is a fire station or organization doing pork steak stands. I usually will grill it, and then throw it in the oven to cook in my special made barbecue sauce for at least an hour to tenderize the meat and really caramelize the sauce to make a wonderful experience. Gotta serve it with white bread though to be used to soak up the sauce.

The pork steaks I grew up with near the St Louis area were nothing like what you are doing. They were thinner and more of a barbecue style cook than straight up grilling technique you chose. Basically, a little slower/longer cook that renders the fast perfectly and hit with a mop sauce frequently throughout the cook. And then when they are done, stack em up on a cool zone of the grill and let them rest.

That looks absolutely delicious. I grew up in Ohio, and my mother made pork steaks often. When I married and moved to Pittsburgh, I made pork steaks for my husband -- once. He had never eaten one before and wanted no part of it. Many years later, I would love to make these again. Sadly, I have not seen any pork steaks in my local supermarket. I wish we had a dedicated butcher shop in my area.

I LOVE these and am so happy you discovered them!
My stores sell them as Blade Steaks. I've seen them both with the bone and without.
They're my mom's favorite! In the summer I do BBQ flavor too with macaroni salad and in the winter and fall I make them on the stove and then deglaze the pan, make a pan gravy and serve them with mashed potatoes!

i am from St Louis this is a staple! tips boil pork steaks in beer for 20 min, pull out and cover in a rib rub, then put on smoker untill a nice char on both sides. about 15-20 min
now put in a coverd pan dump BBQ sauce on them put in oven at 300 degrees for about 3 hours and this will be fork tender and the best thing you ever had! Trust me

Your wife could be worse. My wife is allergic to pork. So I get to eat a lot of turkey bacon, turkey sausage ect. However, I do cook with pork for myself and the kids. But I have to use an entire different set of cookware that is designate as tainted with pork. People sometimes comment on how many pots and pans I have. Well now you know why.

Having lived in St. Louis my whole life(i’m 60) I don’t remember a time when this wasn’t a staple in our backyard bbq history.
That being said, everybody here has there own way and rules of cooking center cut pork steaks. (They usually have the bone in)

commonly found at grocery strores in Central Arkansas. You can take those steaks and break them down into strips and it's called country style ribs. I do have to say that Kraft BBQ sauce is low end and there are so many that are better. Such as Blues Hog which is one of my favorites.

I grew up in Encinitas’s in the 80s, and my dad used to cook pork steaks on the grill all the time. Hadn’t thought about them for a long time. So at one point, they were pretty easy to get here, because my parents only shopped at Food basket, Big Bear and Alpha Beta

What type of pan is that My BIL turned me on to them for baking pizzas and i was able to find one in a goodwill. I saw you had smaller versions too. Ive been searching online and trying to find them. so much better than the junk sold most places.

i should not be watching videos like theese, i'm salivating right now. and i'm thinking oooh that pork steak would be nice in strips on french bread with some cheese sauce, roasted peppers, and some pickled onions

Great video. As a Midwest transplant in San Diego for 20 years it was always hard to find a think cut pork steak. I’ve been cutting my own as well. I love doing Korean gochujang bbq sauce one these.

Found some at the grocery store a few months ago and just went for it. Spg per usual and threw some rosemary and ginger on there. Grilled like steaks and they were phenomenal. They were also only like $7 a pound

I make these all the time but I sous vide them the day before, then finish with a quick sear on the grill. Melts in your mouth like the best filet mignon you've ever had. Definitely try it if you can!

grew up with pork steaks! In Canada, we call them pork blade steaks, because of the shoulder blade. Usually they are bone in, and they are common here. They are amazing with a cilantro lime bbq sauce

An inch cut must be a san diego thing. 1/2 to 3/4, we marinated them in cairo sauce and put in the oven in a pan after grilling on a weber. There will be a hundred ways that differ on preparing.

When I catch bone in pork shoulder on sale I have the meat cutters slice it into pork steaks. I then vacuum seal two at a time and freeze them. Makes for a fine meal and very inexpensive.

I live in Northwest Indiana (Chicagoland. Pork steaks have been around for as long as I can remember. They are usually sold bone in and much thinner. I like the look of yours much more.
