I discovered Sam during the quarantine, and much to my wife's delight, he has me cooking. I've made several of his recipes now, and my wife and I agree that this is one of the best things I have ever made. Flip your steaks often! Perfect pink all the way through. Just a personal opine from you. You own 2 restaurants and have this website, of which, I have learned alot from watching it and also laugh my ass off at the entertainment. Great for a former Canuck neighbor! Do you think the Brit chef dude (forgot his name) from Hell's Kitchen is a bit of, a, well BIG PRICK ASSHOLE?

Regarding the Flip it, flip it, flip it technique that I have learned from Sam's videos. I now do the same when frying steak. I think it does keep the steak juicer and tender. By the way Sam, love your cooking style and your comments! I can barely stand to watch boring cooking videos anymore, you make it so interesting!

The reason you dont flip that often is to develop a good crust (and fond. Sure, flipping often yields the same doneness that an experienced chef gets with just a single flip. However your fond and your crust are lacking a bit due to flipping too often.

Sam I LOVE you. Have watched you you years. BUT if I can afford to buy tenderloin I would put it on the grill and have a potatoe and grilled corn on grill and enjoy a good steak. Can you suggest a cheaper cut of meat for this dish

I'm a bit late to the party, but glad I'm here! That's remarkably close to my version of stroganof, only I tend to do mine with (hold on to your hats) Pork! If you don't like it, you won't get any of it! Lol
