Not a criticism but a word to anglers, the fish here suffered explosive decompression from being brought up so fast from that depth to standard atmospheric pressure. If you intend to release your catch, take your time bringing up bottom species. Were it an out of season fish, it would have to be left for the sharks after suffering irreversible damage to it's organs.

I love eating fish whole I come from a Japanese family, but I leave the find on cause if you fry it right the fins become like chips and really tasty.
Snapper is one of my favorite to fry whole besides pompano and flounder.

The fins get crunchy when fried, and are kind of like potato chips. Try it next time. The slits are also to help the thicker portion of the fillet cook as fast as the thinner part of the fish, otherwise the thinner parts would dry out or burn.

Use a pair of shears ti trim all the fins off, when you slice it of you are moving of your seal, I bake these whole, black pepper, salt, olive oil, stuffed with fresh rosemary and garlic butter, foil wrap in a large enough baking dish.

When I fillet my fish I always cut out the cheek meat. It's the best part. The eyes are actually really good if you have the guts to eat them. They are sweet.
