My buddy Chris invited me to offshore out of Jupiter, Florida. We spent the day drift fishing for bonito aka false albacore or Little Tuny. These fish are often referred to as trash fish and most people do not eat them! They sell for around 50 cents a pound which is very low for a tuna fish species. They are delicious and the myth that they are trash needs to be put to rest. They just need to be iced properly and the bloodline needs to be removed for the best eating experience! The Mustad Vertical Jigs we caught fish on: My favorites are the Daggerman and Moonriser Styles in 3oz, 5oz and 7oz which equates to roughly the 100g, 150g and 200g sizes.

In some parts of the pacific that is a staple fish, we use to catch them on poles, rigged with shellfeather lures with barbless hooks, by the boat load, you catch one swing it in, it hits your chest and falls into the boat then you immediately recast your lure and catch another so you can spam fish without having to lose time unhooking them, as often the shoals are fast moving and you have limited bite time. They are nice eating if fresh and bled and we often eat it right there on the boat now, when sport fishing as shashimi or make it into raw fish when we get back when we bleed them, also they make great baits, cut, or even whole for marlin and other big game fish.

When you trimmed out that fish, I knew you had it right. Yes there is some waste, if you do it right. But the end product is great. I ate mine raw as I trimmed it and pan-seared the tenderloin in sesame oil rare. Oh yes! .Great job guys and gals. This year I want to try threadfin herring, sardines and greenies. Scale, gutted and deep fried! Maybe try some finger mullet.

I heard that Bonita was the highest fish ever recorded in the Gulf of Mexico for contamination whether it was lead Mercury cadmium whatever the fish is loaded full of f trash and 90% of the time any smart angler will tell you that's a bait fish at best I would not advise eating Bonita not from the Gulf of Mexico

What you need is recipe book for fish. My boys at the beginning would never touch blue fish. With some creativity and some spices. Bamm. now bluefish is one of the target species when my kids go fishing at the coast of FL. Even simply quick fry with salt and tumeric, that is all you need.

Maybe I missed the introduction on a previous video but notice you are using a cimeter (scimitar. Is that dictated by the size of the fish or are you just mixing it up? Curious about your thoughts on how it compares to your go-to filet knives

I've never understood why people give Bonito such a bad name. We never had the ability to catch tuna so Bonito were cheap tuna to us. When they exploded the Sunshine Skyway old bridge we dip netted over 300# of them and man it was it good!

There are so many anglers out there that I think really irresponsible when they start putting labels to some of the species and call it trash fish. These fist are not trash. you are just a terrible cook or simply narrow minded person.

So, pan-searing the fish in olive oil after a liberal application of Chef Paul's, then putting the result into a grilled rye sandwich with thousand-island dressing, Swiss cheese, and kraut. it's kinda no wonder it tasted good. :D

Bonito being called a trash fish is so weird to me. Dried bonito is a major staple of Japanese cooking (dashi stock is made from bonito flakes, and in Spain it's all over the place. It's one of my favorite fish.
