I wonder if there are any games where the developers put a ton of effort into an elaborate easter egg, and then nobody being able to find it, either because its too hard to find and/or the community is too small.

I think that secret room with the old Xbox is a reference to an actual event, when a group of artists lived for a long time on a sort of accidental secret room on a mall on the U.S.; they had a PS2, though.

I think we changed the meaning of Easter egg, something that was hidden in plain site easy to find, into super obscured shit only people who look at the game files will find.

Yeah, you actually just need the Golden Plushies.
You don't need to open every Prize Box.
All the Prizes are kept in exact Boxes, so it's not random either.
