Quick hack for making the flour more fine? A coffee grinder. Can take any DRY oatmeal, buckwheat, dried beans, dried peas, chickpeas/Garbanzo, or any dried grain to flour in less than 10 seconds.
I have 3 coffee grinders.
1 for coffee, Starbucks brand.
1 for sweet spices.
1 for savory spices.
Yum. Works well to refresh any dried herb or spices. At the bottom of the peppercorns and it might need a little refreshing? Just give it a short bzzzz, bzzzz.
Done deal.
Making bread with dried herbs or spices? Ditto.
Not enough time for a bay leaf or two in the soup, stew or meatloaf? Ditto.
Enjoy. from somewhere near Seattle and around the World.

wow, you can tell she's experienced by how easy she makes making soba seem. there are definitely a lot of factors taken into account, humidity being the most important one, and I'm assuming she's in New York in summer, which can get quite humid.

Bacon, mushrooms, garlic and parmesan do not belong in a carbonara.
For someone who said the term being respectful to tradition so many times, you could not even bother to know the basic flavour profile of the dish.

In the Italian carbonara there aren't mushroom and bacon and noone uses wine. Carbonara Is made with eggs and guanciale, with a little bit of pecorino cheese, no other ingredient. Thank u
