A few things: 1. Trinidad does NOT have a National dish - far less for the multiples you claim. There are many worthy candidates - doubles being one of them - but none are recognized as the one. 2. Given that 7 out of the top ten hottest peppers in the world owe their existence to a project carried out by CARIRI - a research institute attached to The University of the West Indies in Trinidad, we are the authority on peppers and heat. 3. Doubles are ordered typically one of four ways depending on spiciness: plain (no pepper sauce, slight (average way it is ordered - slight amount of pepper, Regular (please make me into a crying ball of hurt and pain with tears streaming down my face) and heavy (please sear off my taste buds and make me into an inconsolable ball of pained goo with snot coming out of my nose and mouth.

Stop it with the Brooklyn and Manhattan centric food reviews. The undisputed epicenter of NYC's Continental South Asian, amd Indo-Caribbean communities is Queens. Any body who truly knows good Indo-caribbean food will head to Richmond Hill for the city's best Doubles at either Sighs Roti Bar, or Trini City. Only one spot in Brooklyn makes a very good Doubles and that's De Hot Pot in Lefferts Gardens, all others are edible at best. Please stop the Brooklyn, and Manhattan bias in these food reviews.

Good video. Just a few things to add that I haven't seen down below. Just be careful with ordering pepper on your doubles. Some doubles places have very hot pepper sauces while some are rather mild. Also I am surprised that no one showed you how Trinidadians eat doubles. Nothing was wrong with how you ate it and to be honest it doesn't really matter in the end, but to experience the real culture you should have ate it using one bara at a time to scoop the filling.

Doubles is no only a hang over meal it's a Saturday morning after buying market goods or just out from a night shift or a quick breakfast before work / classes quick meal. And I love roasted pepper on mine medium with Chutney and sweet sauce no cucumber or grated coconut. Come Trinidad and try it out. My favorite place to eat is Darrens Doubles behind Maraval's Royal Bank for the wickedest roasted pepper (yummm) and the doubles itself is so tasty.

Bruh. Trinidad Legit have people from EVERY walk of life. I've met More Americans and Canadians in Trinidad then I have in their respected countries lol. There's also ALOT of Guyanese, Venezuelans, Dominicans etc. Trinidad is the ONLY island you will find a White man, an Indian man, a Black man and a Chinese man All liming in the local bar having a good time.

Spinach roll rolls eyes it's called Saheena and it's made with Dasheen Bush or Bhagi! Why the hell do I want to study in the US? Everytime I hear the wrong name for one of my Trini foods I will flip out and cuss everybody in my original Trini dialect. If yuh want to document and educate another person on my foods GET YUH DAMN TERMS AND NAMES RIGHT! DISRESPECTFUL

Please dont call that thing a saheena. There wasnt any spinach. Saheena is supposed to have a lot of spinach. Sheesh. Even the doubles looking doughy. Id rather drive to queens and get waaaaay better food at Trinciti roti shop. You should visit them.

I Love A&A doubles w. plenty Peppa an a touch of tamrind sauce. I'm from Trinidad an it's hard to find authentic doubles so if u in BK it's on Nostrand and kingston go to A&A they close early tho and if your in Queens go-to trin-city
