Okay, I'm just going to put it out there; my brother and me have been trying to make dragon's beard over the last week. But 4 attempts later, we still struggle with getting the right consistency of sugar dough. Somehow, our sugar dough always ends up too hard, that becomes flexible when heated but solidifies quickly after cooling down. We already tried many different approaches: less vinegar, more vinegar, cooking faster, cooking slower, it doesn't seem to matter much. Anyone any idea what we're doing wrong? I highly doubt the temperature gets too high btw, as we have a digital thermometer that works well and we always kill the heat on or just before hitting 132 degrees Celsius

When I worked in kitchens I have probably made sugar water thousands of times. I mixed it, stirred it, added more sugar or water regularly, and never once has it crystallized. I am starting to think it is just some kitchen trick they tell the new guys in the kitchen to mess with them, but now the world just believes.

My dear friend making the cotton candy you were just talking about French fries did you know that as you heat up the oil and is when the oil is hot and you dropped your French fries in it does something very weird to the potato and in fact french fries causes cancer in a big way so avoid

1. You should use something of a tapered dowel to punch a hole. Makes it easier2. Is a bit harder to succeed but try it warmer so it doesnt take forever and the dowel can go through quickly3. If you make it warmer dont hesitate on the corn starch! In fact use it liberally

Tried this but I didnt have a candy thermometer. accidentally burnt my sugar. it turned into pure black obsidian and broke into 20 pieces when it came out of the plastic container. 10/10 am trying again

How do you know there are over 16000 strands of sugar. Do you count them or average the weight per strand to total weight which would give you a rough estimate

that is not cotton candy. its dragon beard candyplus noone is really sure where its from, some saying korea, some saying china, some saying japan, etc.
