On this episode of K-Town, host Matthew Kang is joined by Sang Kim at James Cheese Ribs, in Toronto. Ricky: For all those freaking out why not think of it as a short rib sandwich (no bread) with melted cheese? Moist and juicy meat with a nice melted cheese cover to add to the overall experience. Not new or innovative by any means just a different way of serving up two things that go well together. Think of it like salt. You can get salt from a ton of different things like soy sauce, miso, or just plain table salt. All add saltiness when used but, all have their own flavor beyond salt as well. That is what makes food exciting. Anyone can keep doing the same thing or copy something off the internet but, people who want to stand out challenge you. They understand what flavors work well together, how someone is going to eat the dish and what can be charged to make money from it. F the I did it for the gram over the top internet food chefs. This man has over 200 locations so he must be doing something right!

I had them in Seoul and I get their insta factor but it really didn't add anything to the ribs. Very generic and easily done at home. It made me realize how millennials love everything with cheese. I love cheese despite my lactose-intolerence but sometimes we can be quite excessive with it by putting it on everything. Its a once and a while type dish. It is something I wouldn't want regularly. Maybe I am getting old and really just want depth to my flavours in dishes.

I live in Toronto (near K-town) and I swear i'm surprised that I've never heard of these places you review, but definitely am going to check these place now! Also, whenever you're back in Toronto definitely try Ssam, Piggy's and The Fry!

He described it as sweet with a it of spice so it renders the cheese useless. Unlike a cheese buldak were the protein is seasoned in hot peppers and no sugar is used so that the cheese can alleviate the burn.

I like Korean food but when I go to Manhattan all the menus outside are in Korean so I'm just standing out there like a dumbass. Does anyone have any good recommendations?

I think the cheese is only for the purpose of looking good on those ribs for Instagram photos. I don't see how it can improve the taste of those ribs: )

Was in Korea few months ago. They throw cheese on everything. I'm not complaining. Hahaha but it was everywhere. Esp Street food. Didn't expect that
