Costco sells like 5lb bags of these. First time I bought one I didn't realize they were sliced thinly across the rib bones, or that they were sliced this thinly period. I had intended to braise them but ended up cooking them this way. I don't know why he doesn't mention it in the video, but if you want traditional recipes for these just search for Galbi as that is what they are called in Korean BBQ. Korean style marinade is different but the cooking instructions are otherwise the same (long marinade, short cooking time.

I was introduced to this cut of ribs when we lived in Guam. Some of the ladies I met would bake them in a pan with a whole bottle of soy sauce and big chunks of onion. That's it. And oh god, they were so good and surprisingly not overly-salty at all.

Another good way to do teriyaki beef or bulgogi is to use sliced tri-tip. Same thing: cooks really fast and really likes a marinade. I find you have to let it sit in the marinade 6-8 hours. Dont slice it too thin though!

Nothing is wasted with this dish in our household, my dog loves the bones especially from those non efficient eaters that don t eat all the meat. A real Korean BBQ veteran knows how to leave the bone bare.

Chef John, big fan, but can we not say Korean Barbecue and Teriyaki in the same recipe title? A little history googling will tell you why that s really problematic. The countries are not interchangeable.

lol. remember when McDonalds offered Chicken McNuggets with new dipping sauces and one of them was the Shanghai-Teriyaki sauce. Shanghai is in China and Teriyaki is Japanese sauce.

I used riblets for this today. You can find them at Walmart if you look for them. Applebee's really made a hit with these throw away pieces of meat. Very tasty and easy to cook.

Add a Korean pear or kiwi to the marinade to tenderize the meat. Also, depending on the store that sold you the short ribs, you might need to wash off some bone debris.
