Not that this isn't a great method but you can spray a cookie sheet, do one layer of bacon strips and bake till done. Then put on a tray lined with a sheet of newspaper and a paper towel on top. Saves big time on your paper towel usage. I save my bacon grease for making tortilla and flavoring other dishes like beans and spuds. I pour boiling water on my cookie sheets to loosen any debris and its a breeze to clean up. Personally I wouldn't waste the foil, you still have to clean the cookie sheet.

Check the records and you will see chef that I have never disagreed or even insinuated that might be incorrect about anything. HOWEVER Lol I learned baking bacon when I was in the navy as a technique for cooking for many people. But I have tried tis a million times and I can tell you if the bacon is raised so it cooks in the hot air the fatty part tastes gummy. Bacon must fry in its own fat as it renders. Lay it flat on the sheet pan, lol.

Love this video, and I'm definitely going to do this But one thing: I have to disagree with you about the order of ingredients on the sandwich. The tomatoes need to go next to the mayo AND the bacon needs to go next to the mayo. The mayo enhances the flavor of both, but does nothing for the lettuce. So the lettuce should definitely be in the middle. But, other than that, your video was great. ;-)

John, you forgot to mention that you need to have good bacon I live on a sailboat traveling down the coast of Mexico and Central America. good bacon. smoked bacon is a real treat here. like caviar or prime rib. anyway. I did as suggested and baked the bacon (you have no idea how complicated that can be on a boat especially because the pig wouldn't hold still in the oven) Great recipe, thanks.

Please, Sir, I absolutely must know where you learned to say taunt instead of taut. My buddy and I used to work in Monson, MA and our boss used to say taunt instead of taut. We always laughed about it behind his back, but not behind yours Just curious about whether you're from the area. No big deal either way. Just a funny thing.

Chef John, question. by baking it instead of frying it does it still shrink the same when cooked? And also, will the results turn out as well if I weave the bacon in advance? Thanks for sharing an awesome video, you are a culinary hero. Very shocked you don't have your own show on the food network though.

What is it with you short order cooks leaving out the mustard? My son and son-in-law, both of whom are cooks, each are addicted to mayo, going through a quart per week. This goes for all other cooks I know. Mayo has no taste. You need the mustard for that hint of spicy tartness.

I will bake my bacon any chance I get. I find that the favour is so much better. Sometimes in a spray bottle I will mix maple syrup and water to mist the bacon 2-3 times while baking. It results in a crispier and more flavourful bacon. It does not get as hard as candied bacon.
