For Tahini, go to your next turkish/arab supermarket, there you will find it, don't try to find it in a regular one (depends where you live ofc; ) I live in Germany, you wont find tahini at Lidl or Aldi for example. I for myself miss some ground cumin in there, it is a very typical spice for the region where hummus is served traditionally. (Also the cumin prevents some not nice things happening to your stomach if you eat a lot of peas; ) Another nice thing to do is a spoon of peanut butter and if you like the zest of the lemon. Instead of adding only tasteless water to it you can use the water of the strained chickpeas, it is a little bit thicker and got the flavour of the peas already in it. Garnish the hummus with some olive oil and some dried oregano or basil, if you like you can also add ground red paprika powder to it. Have fun cooking and enjoy your hummus!

This is not hummus there is no garlic! You need to shell chickpeas. I couldn't tell if they were and never from a can. Please buy chickpeas in bulk and store. Soak them in water overnight, shell the chickpeas with family members or friends. Ingredients: shelled chickpeas, good olive oil, tahini, garlic cloves, lemon, spice of your choice (usually cumin or paprika) salt. Go by eye and taste. Taste whilst blending. Adorn your hummus with olive oil, the spice you used in the hummus. Enjoy with vegetables and meats. Use yoghurt if you can't find tahini and add sesame seed oil to the hummus. These extra things are something I do, but not what my mother would do. Also hummum should be smooth

I add absolutely nothing to the blender but Hummus, blend it well, then adding Tahini IP to 50% of the cheakpease amount, adding half a lemon for start and blend it, adding a bit of water if need to until I get the final texture I want. than adding salt and Cumin bit by bit until it taste as I want it to be. Making a Lemon+Olive oil+Garlic souce and spill it over my Hummus dish (not blending it with the Hummus. As for me, the garlic stinks the Hummus so I prefer it on top. Done it many times and this is how I like it. It all depends on your blender, blending time and the texture.

My version - only one garlic clove, twice the tahini, more water, and a pinch of cumin. Round here it's also customary to make an almost bland hummus, then prepare a sauce to put on top - lemon, olive oil, garlic and cumin, like a stron vinegrette. Its called Tatbilla. 2 tbsp. over each hummus portion, and you are good to go. Chopped parsley garnish is authentic for this.

Is tahini super essential? I'm allergic to sesame and I absolutely can't take it (sometimes you're allergic but you unfortunately like the food, not my case, I literally barf if even one seed gets into my food, can I make this without the sesame? Maybe some spices could balance it out? I love chickpeas and I'm curious to try it but the sesame: (

I don't have tahini available in my area so I just throw in toasted whole sesame seeds, a bit of sesame oil and a good teaspoon of mild paprika. I also sprinkle it with olive oil before serving. sometimes I do add a few rosemary leaves and more garlic. Also being a pattissier, I do make a sweet version sometimes which uses Nutella and mexican chille

Kerryann, you lovely. I love houmous and I can't figure out for the life of me why I haven't made any yet. Definitely will do now! Side note, I met a girl on the party island from Liverpool named Katie Anne. I was drunk and kept calling her Kerryann and she was mildly irked. FoodTube on the brain after Drinksing my tube off. Represent! :)

Better off going to the store than wasting your time and money on this crap. Canned chick peas are terrible. You will never get the desired taste or consistancy by using canned chick peas. You need to buy the dried ones and soak them overnight. Boil them in water with 1 tsp of baking soda and then blend them up however you like.

I always put a little bit of cumin, coriander seeds or even some paprika and sometimes I stir-fry real quickly a bit of onions and garlic with the spices (looots of pepper/chili, deglace/clean the pan with a little bit of water, and all the lovely ingredientes that KerryAnn used too, of course. Just for if people get tired from the standard humus, you can always ad some herbs, which will make it fresher in its taste and for a bonus, you can add whatever you think tastes good. Personally, I would recommend a swizz-mint, but if you re not growing mint yourself, peppermint should do nearly as well.
