Gennaro s back with a traditional Italian recipe for Calzone. This folded pizza is stuffed with pancetta and wild mushrooms, gently cooked in a tomato and chilli sauce and topped with buffalo mozzarella and parmesan cheese. A dash of tomato sauce for the top of the calzone before it s cooked to perfection in Gennaro s wood fired oven. A delicious twist on a pizza dinner or a great snack to eat on the go. hello Jamie, or Gennaro. I just opened a pizzaria in China. I have a small problem, I have some friends who make youtube videos who live about 12 hours away. I wanted to make a calzone and send it to them to try on film for an advertisement for me. What should I do. I thought do everything like this but only cook it for about 3-4 minutes till slightly crispy, let it cool, airtight wrap it, send in styrophome box surrounded by ice packs. delivery should take 12 hours. then have them put it into a toaster oven for another 4 minutes or so. does this sound about right to u? thanks for the awesome video. just so you know, Gennaro's pizza dough recipe is what i've been using and people love it!

This is what Italian cooking should be about. He has fun, he keeps it simple to respect the ingredients. He keeps it traditional but also isn't worried about shaking it up a bit. He is inclusive, rather than a snob who says, REAL Italian food needs this specific type of cheese from this specific location, otherwise it's just not done right and you're not capable of cooking Italian food.

I always thought a twist on a marghartitra for a calzone would be nice. Pancetta mozerlla maybe some Romano and parmesan of course basil. Bit of sauce, maybe some onion and garlic. Maybe not traditional but it'd probably be amazing. Sausage would probably be nice too.

I 'm glad he used the technique of adding cold water to mushrooms even with with other elements of the calzone in the pan. Plus also, adding salt and pepper last, if you didn't know this adds the flavour to food. Nice video.

I Really like Calzones I think maybe even more then Pizza! I have never had it with the tomato sauce in it or on it. It usually comes on the side over here in the US. I will have to try this next! Making Pizza's tonight!

In america, i do not know why, if you put the tomato sauce on the inside it is called stromboli, for calzone, thet put the tomato sauce in a bowl to dip the calzone into for eating, why is that?

Just had a Christmas leftovers calzone. Nom nom Turkey, gammon mozzarella & leak. With the leftover carrot, parsnip, onion and chorizo added to the tomato sauce. Nom nom nom.

Oh god Im getting so hungry watching this. Yesterday me and a friend made a pizza by his recipe and it was amazing. Now Im at work watching this and I want to eat so much.
