Korean seasoned raw beef (yukhoe) is a delicious, fantastic totally unique dish: cool, garlicky, nutty, a little sweet and of course meaty Eric: Raw beef is excellent and delicious, as well as traditional to many cultures (French, German, Korean, Japanese, North African, Ethiopian, Thai, Lebanese. If one is worried about bacteria in the beef, just get a really good fresh cut and then sear it on all sides for a few seconds each and then trim away the thin, seared surface area. The only part of the beef that might be contaminated by exterior toxins like microbes is the part exposed to air or water - so after searing and trimming, that possibly contaminated layer will be gone. Unfortunately, if the cow had a disease or parasites then the searing won't kill those hiding in the interior of the meat - but if you get a good cut from a good butcher you should be able to avoid the disease and parasites, because the cow won't have any; (especially if the cow has been raised in a progressive small Herd batch, by a farm-to-table local rancher -- often found easily at a farmer's market. NOTE: NEVER use ground beef either packaged or even freshly ground in front of you: - it simply has too much uncontrollable surface area that can mix-up the possibly contaminated surface area into the rest of the meat, making searing its surface meaningless. So play it smart, buy the best from the best for your safe-raw-eating, and Enjoy your steak tartar.

Korean beef is thoroughly managed in the country. In addition, hygiene and parasite testing are thoroughly conducted. It is the only country where fresh meat slaughtered 24 hours ago can be eaten raw. It is different from other raw meat because it only eats a certain part.

To everyone turned off by the raw beef. don't judge until u try it. To me, a well done overcooked steak is much more disgusting. It's like chewing a piece of leather.
A high quality beef tartare or cooked rare is much nicer. It is so much more flavorful and has a better, softer texture.

I am finally going to try to make this! My Korean classmates introduced me to Yukhoe when I was in university in Japan. I haven't had it since I moved back to the states. I've been dreaming about it for years! Can't wait to try your recipie!

It looks amazing, but i would not mke it myself lol! I don't trust the people to give me good meat. I will look out for it in Korea when I go in October! If I see it I will definitely try it!

Raw beef is my death row meal. It's so good. Korean style or french tartare or done as sashimi. It's soooo damn good and it's perfectly normal. Don't be afraid. It's not going to hurt you.

Thank you so much for this recipe! I made it today and it was absolutely delicious. I added a bit of hot pepper flakes to the sauce and it was perfect!

To those who cannot get Korean pear/Asian pear, you can substitute for no4mal pear or TURNIP. both cruchy and mild sweetness best for beef.

There's no way I could eat this T_____T but I can admire Maaangchi's masterful mixing skills so I'm watching the whole thing!
