Oh I am soo going to try this! I love delicious chocolate mouse but have never made it because of how intimidating most recipes were. But I'm definitely gonna try this out. I want to try your other mouse recipe, but maybe a bit later. Plus, 75% cacao is really good for the body. Thank you for this video and all the videos you do post: ) Have a safe and happy holiday: )

It's just chocolate and water. Just chocolate. It's just chocolate. Very good. It's just chocolate and water. Really, it's just pure chocolate. Pure chocolate, chocolate and water. Ok, I got it. ;)

I did this by eyeballing, using milk chocolate. I also added quite a bit of salt to my ice bath to get it even colder. I served it with some frozen raspberries on top and it was delicious

How come the chocolate doesn't seize when you add the water? I thought water was chocolate's worst enemy. Is it because you keep the water bath temperature at exactly 55C?

Ummm that Chocolate has seized you can tell when he puts that whipped topping on it. So if you want a hard crystallized chocolate mousse then yeah it will work for you.

I saw a similar thing being done on Street Kitchen. Looks amazing. Nice to know a little bit of the science being it as well! Thanks for sharing.

Noooo why didn't you also make the whipped cream yourself too. it's basically the same process as the chocolate mousse. Would've tasted even better!
