Easy Stove Top Beef Birria Recipe

Today I am cooking at home and making stovetop beef birria for tortas. This recipe is inspired by street food taco truck tortas made with beef birria and cheese. INGREDIENTS 3. 1lbs ( 1. 41 kg) beef shanks or Chuck roast meat 2 tsp coarse salt 1 tsp black pepper 4 cups (946 ml) low sodium beef broth 10 cups (2. 36 L) water 2 dried bay leaves 1 small onion (diced) CHILE PUREE 1 chipotle chile in adobo sauce 3 guajillo chiles 1 ancho chile 1 pasilla chile (add 1 cup water to blender for puree) 2 cups (473 ml) water 6 cloves garlic 1 Tbsp beef bouillon powder 1 tsp Mexican oregano 1 tsp dried thyme 1/8 tsp cinnamon (adjust to your preference) 1/8 tsp ground clove (adjust to your preference) salt and pepper to taste FOR THE TORTAS 6 bolillo bread rolls 10 oz Oaxaca cheese (shredded) onion (diced) cilantro (chopped) Garnish with salsa, extra cheese, fresh tomato or avocado Serve with a bowl of the birria broth for dipping
