You guys have been asking for whole fish recipes and whole fish catch and cooks! Well, I decided to fry a whole yellowtail snapper brook and I caught while fishing offshore the other day. Yellowtail snapper is a perfect fish to cook whole, the skin gets super crispy and they are the perfect size for a single person or to share. The fish was dredged in seasoned flour, fried in peanut oil then topped with a tomato sauce and fresh cilantro. See Recipe Below! Recipe: 1. Mix 3 parts cornstarch to 1 part flour, season with coriander, chilli powder, paprika, garlic powder. 2. Dredge dried and scored snapper into seasoned cornstarch mixture. Salt Pepper to taste. 3. Fry in peanut oil 350-375 degrees for 10-12 min flipping halfway through. Tomato Sauce: 1. Prepare in advance diced 4 plum tomatoes, 5 cloves garlic pressed, 1 yellow onion diced, 1 red chill minced seeds removed. 2. Heat oil in pan over medium heat, sautee onions until lightly brown, add chilli and garlic, cook 30 seconds. Add Tomato and 1tsp of Garlic powder, chilli powder, coriander, sugar salt and pepper. Add juice of 2 limes. Cook 5 min until tomato is soft. Top fish with tomato sauce and fresh Cilantro!

I know from watching about all your videos you know exactly what you doing but I wish that you would stress the importance of having always a super clean knives and filet table I just got over the worst case of food poisoning because of that oh and icing it down very well if that gets too warm thought it out don't take the risk and try to freeze it again and cook at a high temperature so you think you get all nasty dead your health is more important then accidentally having you fish go to waste

This is the way we do a lot of fish dishes from off the Southern African coast. Its a great party when you place a number of fish cooked this way along the center of the table and everyone just tucks in and eats. Dont forget the wine. Great show again from two of the best young people on YouTube. Looking forward to the three of you hooking up. Deer meat Nick and your selves.

You know, the best part it's actually the fins and the head. Very crispy and tasty when fried. Also if you have a very large snapper, the head are a delicacy in most part of Asia. You can cook curry with it, or steam it or braise it. Asians will ask, why? why throw away the best part of the fish which is the head part! Cheers! At least you like to eat the fish whole.

victor if ur reading this im from the middle east what u can do is clean the fish the same way and season it with ONLY OLIVE OIL AND SALT then roast it over coals till its done and the skin is a bit chared. but squeeze lemon on at the end or in a bowl mix lemon and finely minced garlic in a bowl to dip in. u wont regret it

Long overdue. Whole snapper preserves so much meat over fillet. not to mention fried whole fish gets you the crispy fins which taste great! I hope more youtubers follow your lead and stop filleting every tiny snapper and fish.

I eat this in Korean restaurants. Slicing is important to keep fish from curling.
I also scrape along the spine aggressively inside to remove the membranes and blood.
