Hey Victor! You should try to roll your fish chunks in flour before dipping them in the eggs. Next time I get wahoo Ill try the panko, looks nice! Fishing in Bonaire Dutch Caribbean, were not in quarantine yet as theres no cases yet on the island you guys stay safe!

Hey Vick the best and fastest way to skin a wahoo is as ur making ur outline of the fish with ur knife you can take a flap of the skin at the top of the head and with a paper towel or towel you can rip the skin right off and it becomes and nice fillet

You should iki jime your fish right after it comes into the boat so you could have some clean filets later. Having dem suffocate you have bloody meat filled with lactic acid. Not nice to look at, fishy taste and difficult to preserve.

You can take the bloodline out much easier if you slightly cut it out as you do each fillet. It's a finesse thing that you have to learn how to do but it's easy and saves all the meat which I think is the best tasting fish in the sea!

I'm living in the Philippines and am returning to the US in July. I want to pick up some dexter fillet knives for the ocean fish. What sizes and styles would you suggest? How do you keep an edge on your knives?

I'm from new hampshire and the ice is out so really no fishing going on. Everything in new england is pretty much shut down. Only thing that's getting me through this cabin fever is some fishing shows. Lol

I'm right with you Victor that's what I love about fishing. Bringing everybody together and having a good food I have so many friends like you who love the fish but don't like it it's so crazy to me
