you absolutely did 100% ruin that fish by freezing. I live in CA, this is a staple fish, people have mixed feelings about them but they are truly delicious. They are very fragile and need to be handled properly. First mistake was not bleeding -- not a fatal error but didn't help. Second is having no ice, they really need to be well iced immediately -- I know there's nothing you could do about that. Finally the freezing. Brutal. Some fish just can't be frozen, this and sierra macs are probably the best two examples. Next time, just eat it raw or seared day of catch. You still haven't really tried this fish -- that's how bad this was. Doesn't count, gotta do over.

Mate those cubera snapper are the best looking hardest fighting fish I'm so jealous we don't have them in Australia. In regards to the bonito they're really good sashimi but as soon as you try and cook them they taste like crap unlike the cubbera snapper we have them in plague proportion. Tried cooking them every way possible with no success.

Robert! You've never had the pacific bonito They're S tier for sashimi bro. Please try it thinly sliced with some soy sauce, sesame oil, splash of lime, sliced red onion, little bit of jalepeno. I get giddy when we catch these in Cabo or Pedasi. We've tried it cooked and didn't like it, your assessment is totally right.

Robert, y'all need to keep a vent tool or descending device in the panga. In Florida you have to have one or the other when fishing for reef fish to aid with fish suffering from barotrauma. The survival rate is outstanding. Great Cubera though. Tight lines and screaming drags!

I’ve caught and cooked up lots of Bonita in California. And I’m with you, it’s not that great cooked. I actually prefer it raw or seared. Poke is great. But you really have to bleed it and get on ice and eat it as fresh as possible. And YFT is still going to be way better!

Here in Chile, I catch a lot of Pacific bonitos from my kayak. Eating them fresh as sashimi, ceviche, or nigiri is really delicious. I don't like them any other way. I also don't eat too many because in the South Pacific we have a lot of fish with excellent flavor and quality.

For the bonito, I’ve noticed that freezing it (even if done properly) deteriorates the meat quality wayyyyy more than other fish. In my opinion one of the best eating fish when prepared fresh, but dethawed it’s mediocre at best.

Hey Rob. Isn't it possible to depressurize her bladder Here in Florida, we use a TINY little needle to let air out of their bladder, so they can get back down with no problems. Would that work on a big Cubera

Even in Cali the only reason I'd keep ONE would be for Fish salad sandwiches. Cooked, Mixed with mayo, red onion, relish, salt, pepper, celery thrown between some bread. Otherwise, it's cat food lol.

My fav is yellowfin We have the Atlantic Bonita (not the albies) the Atlantic version is awesome fresh and raw But kinda funny you running for the trash can! lol no harm no foul in trying Cheers man

When you bring up a fish from that depth its called barotrauma you always need a venting tool or descending device you can buy the tools in Florida it's a law to have those tools on your boat

Catch those pacific bonito here in Southern California pretty often during the summer. They're are excellent smoked or sashimi but terrible cooked, just like any other tuna in my opinion.

Freezing the White Tuna should have killed any parasites. Try cooking it Tataki style and leave it raw/warm in the center. Thats what I do with Bluefin and yellowfin tuna.

Man, I miss Los Buzos. Even when the fishing or conditions aren't cooperating it's still a great time. My last trip we went exploring the coast it was pretty cool.

Next time I come down or we fish together I’ll give you a descending device that I have. It will decompress their swim bladder for better releases

We get them here in New England, Atlantic Green Bonito is what we call them. One of the best eating pelagic fish we can catch inshore. Sashimi Baby!

When I fish in Cabo the captain keeps those. Makes either ceviche or tacos with them. Make sure to bleed them out as soon as you catch them.

No excuse not to have a mechanical decender rigged and ready when fishing 100'.
Your livelihood depends on that fishery.
