If you crave snickerdoodle cookies and love soft, melt in your mouth muffins, then make this stuffed snicker doodle muffin right now! It is LIFE. Recipe below: INGREDIENTS: Muffin batter: 1 can garbanzo beans, drained and rinsed cup almond flour 2 egg whites 2 tablespoons coconut oil cup Greek yogurt cup Stevia 1 teaspoon vanilla extract 1 teaspoon cinnamon teaspoon baking powder Pinch salt Filling: 3 ounces low fat cream cheese 2 tablespoons Truvia teaspoon cinnamon Topping: 1 tablespoon Truvia teaspoon cinnamon DIRECTIONS: 1. Preheat oven to 350 degrees. 2. Blend the muffin ingredients in a food processor until smooth. 3. Microwave the cream cheese for 20 seconds. Stir in the Truvia and cinnamon until smooth. 3. Spray 6 foil-lined baking cups with cooking spray or use a glass muffin pan. 4. Spoon each halfway full with batter. 5. Spoon in 1 rounded teaspoon of the filling into each one. 6. Cover with remaining batter. 7. Stir together the topping ingredients and sprinkle on top. 8. Bake for about 22 minutes or until set. Let cool before eating. MACROS: Calories: 194 Protein: 8 g Net Carbs: 10 g Fat: 10 g Fiber: 4 g Cost: $4. 43 for the whole batch. $0. 73 per muffin

AHHHHH! Cassey! You scared me by your snow white costume! I was expecting a long hair beautiful lady! But anyway, you look super cute! Really love this recipe! Cause especially, I LOVE CINNAMON! Is there any replacement for Greek yogurt? I used to eat it everyday now but am trying to stop having dairy so I can clear off my face since dairy causes inflammation and thus acne. So yeah >. < almond and coconut yogurt are so expensive. Is there anything else? DX

Ooh I was thinking maybe just use banana instead of Greek yogurt? Both make the thing really moist and fluffy so I think it might work and I can cut down on the stevia too. But banana can't replace Greek yogu in everything: (

blogilates is there any substitution for Coconut oil? Could you please put alternatives to coconut in your videos? I am very very allergic to coconut oil, sadly. Thank you so much for posting all your awesome vids!

I did this today and the stevia overpowered everything. It tasted awful, I have to throw everything out in the end because it was too sweet. :( first time using stevia. Should have did a taste test first. Sigh.

I'm always skeptical about using beans as a base for dessert recipes. I always think that the bean flavor will overpower the sweeteners. Does anyone have any input on this or used beans for dessert recipes?
