The bowl:

baby green lettuce
beet greens

bell peppers (arranged by color of course! red, orange, yellow)
kale & bok choy (sauteed in olive oil)
edamame

The dressing:

lemon juice
dried herbs
cumin
black pepper
It was BOMB!

I thought whole grains (short grain brown rice particularly) were supposed to be 40-60% of your daily food. I'm pretty sure that I'm right on this. Majority whole grains with perhaps 20-40% root veggies and a lesser portion of greens/salad (mostly cooked and a small portion uncooked.

I'm not sure if someone already said this but I think you may have switched the percentages for whole grains and veggies! I thought in macro diets whole grains encompassed 50-60%. Regardless this looks so so good and I can't wait to try it! thank you: )

I seiously NEED to make this but I can never find the motivation to make things or cook. because I'm still at home with my mom and grandparents cooking everything so I don't really ever have a choice in what Im eating for family meals everyday: (

I replaced the dressing with olive oil, apple cider vinegar and tabasco or wasabi, it tastes amazingly good especially with all the colorful vegetables. love it so much and it's already on my weekly meal plan.
