There are so many things I ended up having to ask my uncle about. Like for starters the Pozole as in the corn isnt called that, it's called maiz cacahuazintle. In the central and northern part of Mexico pozolerias are in fact places that sell pozole, but in the southeast pozolerias are places that sell pozol which is a drink/dough made of corn and roasted coco beans. Also pozol rojo as far as i've had it isnt spicy at all? Unless the person making it doesnt remove the veins and seeds, and doesnt like cook it before you blend it. Just a bunch of like little things here and there that threw me off. Like personally for me, I like my pozole with a lot of maiz cacahuazintle than what was put in this one.

I hate hate hate hominy, but I love corn. That roasting idea has changed my life. Since this pozole recipe was posted, I've been experimenting with toasted hominy. I'm doing another test today -- four cans, two colors. Trying oils today. I've got peanut, sesame, corn, and canola. I'm excited. I'm very close to cracking the recipe. When I do, toasted hominy is going into sooooo many things this holiday season. Cornbread stuffing, muffins, salads. I can't wait. This will be the year I'm remembered for reintroducing my family and friends to hominy. We're from Texas. We should love it. But, because of the blanding in the can, we don't. Not yet Soon.

Pozole is made with hominy, which is processed corn with the germ removed, and meat, traditionally pork. It's also often made with chicken, especially for those who don't eat pork. The stew is seasoned with a combination of spices, and it's typically topped with garnishes like radishes, avocados and lime juice

Great recipe Like my mother in law used to make, never got it quite down yet. A number of people are commenting on Rick's manicure (perfectly done, loving it. Too bad it's against ServSafe guidelines and health code. A ding on the inspection here in the Midwest, big easily avoided no-no.

Thank you for showing this beautiful dish. One of my faves Mexican dishes(not chicken) Everyone makes it different. This looks great Seems like a very flavorful dish. But am I the only one that despises chicken pozole? I like the white, green and red pozole but not with chicken.

the pozole is more like chicken soup. it needs about three times as much pozole or more as he put for a good pozole. the chicken dominated the bowl to me. also pozole in most homes always come with thinly sliced cabbage with the meal a bite of freshness

One thing I've noticed and genuinely wonder why: Americans say cilantro for coriander, but when talking about ground or seeds, Americans also say ground coriander/coriander seeds - why not cilantro? _ Just a question Interested in answers/thoughts: )

Hi. I just made a variation on this recipe (with different peppers) and it is the most delicious thing I have ever made and maybe have ever eaten. Just thought I'd mention that. This is a great recipe. Roasting the Hominy is a brilliant move.

I've never heard or tasted or seen Pozole Verde, only rojo, and now I see why There is so many steps, rojo can be easily made with like a few cans and some pork meat. XD My grandma will wake up at like 3am to make menudo but not pozole

not to ruin the recipe but. is there any way to make this without chicken or other meats? even if its just something else to enhance the broth and having it as a soup instead of a stew? This looks absolutely mouthwatering.
