last time I used oil in a cake was olive oil in financiers, because we lacked butter. so it was not even fully oil based. but it was still a disaster. you could taste the olive oil in the sugary/almondy flavor, and if you pressed the cake a little, you could see the oil. so maybe the proportions were wrong, but I swore to myself never to put oil in a cake ever again.

Here is my admission: when Americans say 4 ounces for things like cream cheese, I legitimately cannot guess if they mean ounces weight or (fluid) ounces volume. I have guessed both ways in the past and been wrong both ways in the past, and I just don't know how y'all handle it.

Question: I'm a horrible baker but have made a cake really similar to this one in the past and absolutely loved it. With a recipe like this, is it ok to substitute the flour for a gluten free xantham gum based one? My entire family is celiac haha.
