Today I am making chicken enchilada cornbread casserole also known as tamale pie. This is a baked casserole dish perfect for dinner. The cheese in this recipe is versatile and can be made with ground beef as well. Ingredients 1. 5 lbs shredded cooked chicken add seasonings and spices to your preference 8 oz (227 g) pepper jack cheese I used an 8 x 12 (2. 7 quarts) baking dish Bake at 400 F / 204 C for 23 to 25 minutes CORNBREAD MIX 1 cup (140 g) yellow cornmeal 3/4 cup (98 g) all-purpose flour 1 Tbsp (15 g) baking powder 1/2 tsp (3 g) salt 2 Tbsp (25 g) sugar 1 large egg 1 1/4 cup (295 ml) milk 3 oz (85 g) pepper jack cheese ENCHILADA SAUCE 1/4 cup (59 ml) cooking oil 1/4 cup (35 g) all-purpose flour 2 Tbls (12 g) chili powder 1/4 tsp ground cumin 1 tsp garlic powder 1 tsp onion powder 1 Tbsp (10 g) chicken bouillon 2 cups (473 ml) water Angie: I have a recipe for tamale pie from the corn meal box I saved years ago.
