Sam the Man! I just wanted to tell you that after all of my 40 some years you are the one who taught me how to correctly crack an egg. I have been cooking since I was a little girl and I love to cook. I've always cracked the egg on the rim of my bowl, but you taught me to crack it on the solid table or work surface with your middle finger as a buffer to keep from smashing it all to bits! I LOVE THAT. IT WORKS! Now, I will always remember that you are the one who taught me how to crack an egg. XOXO'S

I make something sort of similar to your kitchen sink frittata. I use whatever I find in my fridge: bacon bits, cheese, leftover onions, peppers, capers, cheese, broccoli in chinese garlic sauce, beef bourguignon, whatever. and cheese. Fry it all up in a pan, stir in enough beaten egg to bring it all together, scramble it up, and divide it into two large 16 oz. ceramic mugs. voila! I call it Mug O' Mess.

I have been making this for years (all the leftover good shit in the fridge mixed with eggs. In Oklahoma it's called an egg casserole. Excuse my ignorance, but is it the chilli that makes it a frittata (I'm not gonna bother looking it up? That's an ingredient I haven't added before. Either way, Thanks Sam. I bought a little baby 7 ounce can of Spam at the grocery store today while picking up the rest of my weekly items, inspired by watching Sam's video last night Will give it a shot tomorrow! Been doing the same thing with summer sausage for years, as an ingredient in my various fried rice dishes, and that's been a fantastic addition.

Hey Sam, this easter weekend I tried making the frittata and the spam omelette. I have to say these were knockouts, so good. Super simple and lots of flavour. This was my first time trying spam and I have no regrets ha! Keep the awesome videos coming! I appreciate them. Cheers!
