
Making Thai Chicken Coconut Curry with Ingredients from the Garden!

1 whole chicken in pieces.
Prepare fresh seasoning to blend;
-Chive
-Culantro(Chadon beni)
-Thyme
-Pimento
-Garlic
-Hot pepper is optional(Scotch bonnet)
Curry powder to combine;
-Chief Cariherb Curry Powder
-Chief Saffron Powder
-Chief Anchar masala Powder
Heat up pot
-Add Soyabean oil
-Diced onions
-Chopped garlic
-Pimento
-Curry leaves
Sauteed till golden
-Add in curry mixture
-Add in fresh blended seasoning
Sauteed with little water for 3 mins
-Then add in chicken.
-Add salt, black pepper & Chicken powder seasoning from Chief & mix.
When it begins to stick a little, add in water to cook until sauce has thicken medium and chicken is cooked.
Eat with jasmine rice or roti.

Seeing Benjamin standing on a chair to watch and help you cook, I wonder if you have ever thought to look into buying a kids kitchen stool made just for your kids to safely stand at the counter. They are great and keeps them from falling. With Samantha Grace coming up behind Benjamin soon, it might pay to buy one. Not being criticaljust from a grandmas point of view. Hi, I do really like your video specially when you cook Thai food. I am from Thailand and now living in Pennsylvania just for 2 years and I cook Thai food for my husband everyday. Onion and garlic go in the pan first to brown. Also I recommend Chaokoh coconut milk, I think it is best. I think you are a fine Thai cook. Try to make Massaman chicken or Palo. Both are sweet and not spicy for Americans. If you need help let me know.

I hope You consider home schooling. You obviously teach Your child more in just a few hours than hed learn in a month of school, just by including him in your activities. My home schooled children loved measuring, calculating, learning new words etc. I sent them to public school after they turned 14 and they were well prepared.

If you like pineapple add a large can of chunks, some smoked paprika, lemon, extra coriander and some garam masalaI made a giant pan of chicken and dumplings and seasoned half with all the curry goodies. IT WAS A BIG HIT. Your place and family are special, enjoy every minute.

Hi Laura may I recommend adding a splash of fish sauce to this curry. You'll get it at the Asian grocery store. Same brand as the coconut milk. Fish sauce is a salt with an umani sort of flavour so adjust your salt accordingly.

Great video! I started making red coconut curry during the pandemic. I also use far more paste than most recipes call for. I use kale in mine. Also, if no allergies, crushed peanuts are delicious as a topping.
