Nice series but why send a caucasian person for this series? Are there no Taiwanese or Chinese people with eater who can do this? Every country and culture has a depth that an outsider will never be able to get. As a 2nd culture adult, I love how Matthew can put into words in his KTown episodes things, that I understood but could not express. Taiwan as has been hinted in this series is a wonderful, deep and vibrant place, why not let someone who has deeper understanding of these cultures tell their stories?

is it just me or do you hate when food youtubers and newscasters don't let master craftspeople show you their craft? They awlays have to make the item to. It's like can we just see the beauty of there craft people. Plz, and thank you for going there but can the craftsperson do it plz. (thank you for mostly showing the craftspeople doing their craft! I dig that)

So cool. pulled noodles actually gave origin to the name ramen. In mandarin, it's lamen but because the Japanese language can't pronounce the letter L, they substituted it with R. Great series on a beautiful city. I wish more series on other Taiwanese cities and mountains. I have seen some superb cuisine from mountain residents in Taiwan.

the beautiful crafting of this video does justice to beauty of the food, people and country. sometimes the prettiest videos lack story, or are too west-centric, etc etc. but this is good and i'm glad you let the noodle-makers do most of the talking. and i'm like obsessed with the subtitle animations. well done well done

Great series! I have been very lucky to call Taiwan my home for the past 4 years. Northern Taiwan is so beautiful and the rest of the country has so much to offer, especially the central mountains and the east coast!
