crystalized ginger truly is underrated. i can't have a lot of sugar anymore, but i used to always have some in a little bowl on my desk as sort of a stretch goal when children visited the office. like they could have a piece, but if they stuck one in their mouths they would have to commit to chewing and swallowing.

If you make these in a variety of lengths (by making the first loaf into a triangle instead of a rectangle) you can stack them up into a Christmas tree shape; my mother always used to do that with cranberry biscotti for Christmas parties

I have to be honest I much prefer my gingerbread (and cookies in general) to be at what I would call the soft bake stage of doneness. To each their own but I prefer not to tear up the roof of my mouth when I am eating.

You'd end up eating 20% of the dough. I think you underestimate me. I'm almost 50 years old and I still don't understand why anybody would ruin good cookie dough by baking it.

I really don't care for biscotti or coffee. However, I may try this and see how it is after the initial baking period before it gets turned in to tooth shattering briquettes.
