Strawberry Swiss Roll - a delicate refreshing cake perfect for warm days of spring and summer. It is very easy to prepare and looks totally impressive not to mention it has an incredible flavor and completely melts in your mouth. Ingredients Makes about 10-12 servings Cake 3/4 cup (95g) all-purpose flour 1 tsp (4g) baking powder 1/2 tsp (2g) salt 4 eggs 3/4 cup (150g) sugar 1 tsp (5g) vanilla extract 2 tbsp (28g) vegetable oil, like canola oil, etc Strawberry Jam Filling 10 oz (300g) strawberries, cut into smaller pieces 1/4 cup (50g) sugar 1 tbsp (15ml) water Cream Cheese Filling 9 oz (250g) cream cheese, room temperature 1 cup (240g) whipping cream, chilled 1/2 cup (60g) powdered sugar 1 tsp (5g) vanilla extract For dusting Powdered sugar 1. Prepare the strawberry jam filling. In a small saucepan put the strawberries, sugar and water. Bring to a simmer, stirring occasionally. Press the strawberries with the back of the spoon to speed up the process. Simmer until the mixture is thick, for about 15-20 minutes. Remove from heat and let cool completely before using. 2. Prepare the cake. Preheat the oven to 350F (180C. Butter a 12X16 inch (30x40 cm) baking tray and line it with parchment paper. 3. In a medium bowl whisk flour with baking powder and salt. Set aside. 4. In a large bowl add eggs, sugar and vanilla extract. Beat with an electric mixer until lemon yellow and foamy. Add oil and mix until well incorporated. Gradually add flour mixture. 5. Pour the batter into the prepared baking tray and spread evenly into the corners using the back of the spatula. 6. Bake for 12-15 minutes until a toothpick inserted into the center comes out clean. Take a kitchen towel and generously sprinkle with powdered sugar. This helps the cake not stick to the towel. Flip the cake over the towel. Remove the parchment paper and dust with powdered sugar. 7. While still hot roll the cake up in the towel. You will have to do it while is still hot/warm otherwise it cracks. Let cool completely. 8. Prepare the cream cheese filling. In a bowl, beat cream cheese with powdered sugar and vanilla. In another bowl whip the cream with an electric mixer until it forms stiff peaks. Fold together. 9. Unroll the cake and spread the strawberry filling evenly over the cake. 10. Spread the cream cheese filling on top of the strawberry filling. 11. Roll the cake back up. Refrigerate for at least 1 hour before serving. 12. Sprinkle with more powdered sugar before serving and decorate with fresh strawberries.

I tried this recipe today because I had a lot of strawberries and it tastes wonderful Maybe I didn't leave the cream cheese out long enough to soften because it wasn't easy to mix it but other than that it was pretty easy. My cake however, was thicker than how it's supposed to be and made with Miller flour instead which still was easy to roll as long as you do it right while it's still warm. Thank you for these instructions. They were easy to follow. This recipe is easy just slightly time consuming. It's not a 30 min or less recipe. But still fun to make and enjoy

I just started baking and I wanted to try this because it looked amazing. After quite a bit of sweat and praying, I finally finished this recipe and it was lovely. There was a nice contrast between the sweet cream cheese and the sugary tart flavor of the jam. At first, I thought that it was going to be too sweet because there is sugar added to all of the components (fillings, cake, and outer decoration) but the cake was fluffy and light which balanced the sweetness very nicely. Your a healer I bet you don't know it I beat you think your just a cook your videos are much more that cook show it entertainment, therapeutic and uplifting to watch you don't know how much I always watch your videos when I'm down and depressed etc you music surprises not my type but I've always enjoyed it you opened my mind about cooking shows your I love no words just pictures and I remember how you did it lol anyway thank you thousand times over.

would really love to make it for sunday, but i want to make chocolate swiss roll with chocolate mouse can you please tell me how can i make a chocolate sponge for this? can i just remove 1/4 cup of flour and instead switch it with cocoa powder or is it too much? you think that will do? please please i need an advice and thank you in advance. love your videos. my husband loves the tuna and potato patties big time

You have to put sponge on parchment paper sprinkled by sugar then sprinkle sponge on top, lay another parchment paper on top of sponge then moist tea towel on that and wrap all together. You have time to whip cream whenever youre ready just unwrap sponge and spread your stuff it is much easier to roll using moist towel and roll looks much better: )

This was a success. I tried it but I made the strawberry sauce without sugar since I don't like sugar that much. Then I used whipping cream instead of cream cheese, and chopped white chocolate, then I mixed it with the cream. I must say that the roll came out very soft, moist and yet it didn't break I will definitely do it again.

This looks fantastic However, on the one occasion I tried to make a Swiss roll it was a complete disaster It all broke apart and looked like a hideous mess I envy cooks like this who can get it right every time. I tried to make some bread as well not so long ago, but because it didnt rise I made two house bricks

I made this a couple of days ago, it was REALLY delicious, however i think the jam filling was too much (I used cranberry in the same amount) and the cream was so much that i couldn't roll it up without taking a lot out. But next time i will know what to add less and it will be perfect. Thanks for the recipe

I love this recipe have made it multiple times so far, but do you have any tips for not gettting some cake stuck on the parchment paper, everytime i peel it off i always get a layer of cake off of it, so i tried cooking a little longer but then it becomes overcooked?
