Sous vide is the way to go. I make a compound butter with garlic, rosemary, and salt, then add it into the bag before sealing. Cook for an hour, plus one hour per inch of thickness of the steak. Pull it from the heat and put it in an ice bath for 10-15 minutes to drop the temperature. This helps you not overshoot the internal temperature when searing. Remove from the bag, pat dry, then throw on a pan. I prefer a flat top griddle as hot as possible. I used to do a chimney grill starter but the flare ups from the rendering fat will deposit soot on the steak, giving it an unpleasant taste. Adding a weight to press the steak down gently on your cooking surface also helps give a more consistent and even sear.

Want the absolute least amount of grey bands on your steak Dry brine a bunch of them on a cooling rack in your fridge over night. Season with pepper, garlic, whatever and vacuum pack individually. Toss them in the freezer. Now when you want a steak take your pre prepared steak(s) out of the freezer. Freezing a steak allows you to sear the very outer edge with out raising the internal temps. You then bring the rest of the steak slowly up to temp in your preferred method. Insert a probe as soon as it allows.
Perfect every time.

Ok. At first glance of the thumbnail, I was a little disappointed. I wait weeks for you to drop new content. And this is what we got But then, like every video you make, I was very entertained and very educated by it. So well done Ryan (has that pun gotten stale yet. It wasn't necessarily a subject I wanted, but it may have been a subject I needed. And BTW i'm genuinely curious about Kate and water comment. Also, when you whipped the steak at the grill. that was fantastically perfect!

Ive been building more muscle than I have my entire life with potatoes and beans and plants lol. High carb low/no fat whole food pant based diet. In 12 years I have gained 27 pounds of muscle. 18 years training total. Steak has ZERO fiber, trans fat, cholesterol, the burnt part is cancer causing, and red meat is now classified as a carcinogen. You can do whatever tf you want. Good luck.

I have a sous vide machine and it’s worth the cost. In addition to steaks, you can make the juiciest breasts ever. Sous vide a bunch of them, keep them in the fridge and when you want pull them out and warm them up. Also boiled eggs by the dozen and they don’t have to be vacuum sealed.
Meat turns out the same every time with the reverse sear method.

Sous vide is a game changer for making your steak. The set up is not expensive, and it's the the only way I like to cook steaks. I've been doing it for over a decade. The nice thing is, keeping a crappy cut in the water longer breaks down connective tissue and makes it super tender.

Reverse Sear is the only way to make ribeye IMO. On my smoker till it's at 110 then on a charcoal or wood grill for 30-46 seconds on each side. Pushing it to 135. Rest for 2 minutes. Perfection every time: D

Welcome to the reverse sear club bruh. This is the way. Eat one for breakfast/lunch right off the sear, and eat the second one cold sliced up with some cheese for dinner/snack. 2 steaks a day is the way.

You are supposed to heal the steak at a high temp for like 1-3 min then low temp like 160 old cook here, or you do the reverse method season a wooden cutting board and let the steak suck in the seasoning
